To achieve good coffee, it must be collected when the fruit is at the right point of maturity. In a plant, at the same moment, there are fruits in different stages of maturity.
Therefore, manual harvesting is the only way to guarantee that the fruits are at the optimum level of maturity.

Roasting is the key moment in the entire coffee-making process.
Since our beginnings, in Saula we have used the traditional method: slow roasting at 225ºC, with the aim of ensuring the best flavor, color and aromatic profile.
