Dillon Edwards began in coffee as many do—casually. Working as a barista in a town outside of Nashville, Edwards may have stayed on the periphery, pulling shots. But a move to Portland, Oregon, landed Edwards at Stumptown and the fore of the coffee movement. Stumptown made an impression on Edwards, who must have made an impression back, because they brought him all the way across the country to work their program at the ACE Hotel in New York City.

Edwards still wasn’t done exploring. He crossed an ocean to work for Bonanza Coffee in Berlin. Stateside once more, Edwards worked as a barista for Blue Bottle, where he met roaster and future partner David Stallings. Looking to move away from the counter himself, Edwards got into roasting, tapping into an increasingly DIY-friendly coffee market.

Roasting out of Pulley Collective in Red Hook, Edwards eventually opened a Parlor pop-up shop in Williamsburg’s Persons of Interest barbershop. Success percolated rapidly, with Stallings coming on board to Parlor and operations moving to the Brooklyn Navy Yards, where a tasting room lets Edwards share his passion for coffee while wholesale carries his seriously expressive output everywhere from the Wythe Hotel to Vancouver, Canada. In 2015, Edwards earned a StarChefs Rising Star Artisan Award for his work at Parlor Coffee.
